What is Katsuobushi?
Katsuobushi, also known as bonito flakes, is a traditional Japanese ingredient made from smoked, fermented and dried bonito fish. It is a central component of Japanese cuisine and is primarily used to make dashi - one of Japan's basic broths.

🍲 Classic dashi broth
Preparation:
- Bring 500 ml water to the boil.
- Add 10 g bonito flakes and simmer gently for 2-3 minutes.
- Drain through a fine sieve - the base for miso soup, udon and more is ready!
🍚 Ochazuke (rice with green tea & bonito flakes)
Preparation:
- Place cooked white rice in a bowl.
- Sprinkle with bonito flakes, nori, sesame and some wasabi.
- Pour hot green tea over it – serve immediately.
🥗 Tofu salad with bonito flakes
Preparation:
- Cut the silken tofu into cubes and arrange on a plate.
- Garnish with scallions, soy sauce and bonito flakes.
- Serve slightly chilled.
