🥄 Vegetable curry with curry leaves

Preparation:

  1. Heat 1 tablespoon of oil in a pot and briefly fry 6-8 curry leaves.
  2. Add 1 diced onion, garlic and ginger and sauté.
  3. Add vegetables of your choice (e.g. zucchini, carrots, potatoes) and deglaze with coconut milk.
  4. Season with turmeric, cumin, salt and pepper and simmer for 15-20 minutes.
  5. Serve with fresh coriander.

🍵 Zucchini soup with curry leaf aroma

Preparation:

  1. Heat 1 tablespoon of oil in a pot and fry 5 curry leaves in it.
  2. Add 1 onion and 2 diced zucchini, fry briefly.
  3. Pour in 500 ml vegetable stock and cook for 10 minutes.
  4. Season with salt, pepper and a little lime juice.
  5. Puree and serve with a dollop of yoghurt.
