What is Katsuobushi?
Katsuobushi are dried, fermented and smoked bonito flakes and are considered the heart of Japanese cuisine. They are the most important ingredient for dashi - the base broth for many Japanese dishes such as miso soup, ramen or udon.

🍲 Classic dashi broth
