What are Umeboshi?

Preparation:
- Allow freshly cooked rice to cool slightly.
- With wet hands, take a small amount of rice and flatten it.
- Place a small piece of umeboshi in the middle, cover with more rice and shape into a triangle.
- Optionally wrap with nori sheet. Perfect for bento boxes!
🥗 Summer rice salad with shiso ume dressing
Preparation:
- Cook rice and let it cool.
- Chop the cucumber, avocado, carrot and spring onions into small pieces.
- For the dressing: Mash 1 umeboshi, mix with 2 tablespoons of rice vinegar, 1 teaspoon of soy sauce and a little sesame oil.
- Mix all the ingredients together, add the dressing and garnish with toasted sesame seeds.
