Preparation:
- Soak rice noodles in hot water for 5 minutes.
- In a pan, fry the tofu, spring onions and mung bean sprouts.
- For the sauce: Mix 2 tbsp tamarind paste, 1 tbsp palm sugar, 1 tbsp fish sauce, 1 tsp soy sauce and add.
- Add noodles, mix well and garnish with peanuts.
🥣 Indian tamarind chutney
Preparation:
- Mix 1 tablespoon of tamarind paste with 100 ml of water.
- Season with 1 teaspoon cumin, 1 teaspoon garam masala, 1 teaspoon sugar, salt and chili.
- Simmer for 5 minutes until the chutney thickens.
- Allow to cool and serve with samosas or pakoras.
