What is cane sugar vinegar?
Cane sugar vinegar is made from fermented sugar cane juice and is particularly widespread in Southeast Asian cuisine - especially in the Philippines. There it is under the name Sukang Iloko and is traditionally used to prepare dishes such as adobo or kinilaw (a type of ceviche).

Preparation:

  1. Marinate 500 g chicken pieces in a pot with 100 ml Silver Swan cane sugar vinegar, 100 ml soy sauce, 3 cloves of garlic, 2 bay leaves and 1 teaspoon pepper.
  2. Bring everything to the boil and simmer for 30 minutes.
  3. Optionally serve with cooked rice.

🥒 Cucumber salad with sugar cane vinegar dressing

Preparation:

  1. Cut 2 cucumbers into thin slices.
  2. For the dressing, mix 2 tablespoons of Silver Swan cane sugar vinegar, 1 teaspoon of sugar, 1 teaspoon of sesame oil and a little salt.
  3. Mix the cucumbers with the dressing and let sit for 10 minutes.
